Chocolate Energy Bites
Inspired by these two-ingredient chocolate energy bites, we decided to add a little twist to make them easier to eat on-the-go.
Ingredients:
12 Pretzel Thins
⅓ c Semi Sweet Chocolate Chips
¼ c Protein Trail Mix (we used almonds, peanuts, pumpkin seeds, & goji berries.)
Instructions:
- In a saucepan over the stove, bring 1-2 cups of water to a boil. Reduce heat to a simmer.
- Place chocolate chips in a heat-safe bowl on top of the saucepan. Be sure to use a large enough bowl that the bottom won’t sit in the water. Stir regularly until all of the chocolate is melted.
- On a baking sheet lined with parchment paper, spread out your pretzels.
- Using a rubber spatula, spoon the chocolate onto the pretzels. Top with trail mix while the chocolate is still warm.
- Place the baking tray in the refrigerator for approximately 1 hour, then enjoy!
